Little balls of goodness
This is one my favourite go-to snacks - these little morsels are packed full of goodness and taste like dessert! Pop them in the fridge and you'll always have a healthy snack waiting for you (or a guilt-free dessert!)...
You'll need a food processor and the following ingredients:
- 3 very ripe bananas
- Juice of 1 lemon
- 3 tablespoons of coconut oil (melted)
- 2 1/2 cups of oats
- Handful of chopped nuts (almonds and walnuts work well)
- 2 heaping tablespoons of raw cacao or carob powder (or unsweetened cocoa in a pinch!)
- Desiccated coconut
- 1/2 teaspoon of cinnamon
- 1 tablespoon of Maca Powder (optional)
- 1 tablespoon of protein powder (optional)
Peel the bananas and whiz them up in your food processor.
Add the melted coconut oil and lemon juice.
Once that's blended, add cacao, nuts, cinnamon and any optional powders.
Pour into a bowl, add oats and stir.
Sprinkle a thick layer of coconut on a plate and have another plate ready.
Wash your hands very well!
Roll up bite-sized balls, drop into the coconut, roll and then place on the empty plate.
Cover with cling film, pop in the fridge and enjoy :-)
